N’Oatmeal Breakfast Bowl

N'oatmeal Breakfast Bowl (grain free, fruit sweetened, dairy free, #vegan, #paleo)

Taking a moment at the end of the day to bring you this sweet little bit of a breakfast recipe/strategy. Sunday is Olympic Lifting day at my Crossfit box, which means one and a half hours of strength, skill and metcon work instead of the usual one. #win Without pausing for a shower(!) I headed north under the Bay for my first visit to the Berkeley gem Mission:Heirloom in time to enjoy grass-fed, organic, chemical-free (auto-immune-compliant) food, conceptualized with playful care and executed with fresh, local, inventive, seasonal ingredients.

I sat down in the cafe’s edible garden with co-owner Yrmis, Natasha of The Feisty Kitchen and Dr. Jolene Brighten (both Instagram friends turning simply friends) for a luxurious lunch. If Mission:Heirloom is the future of nourishing, sustainable eating, it’ll be a delicious one. The meal finished with giggles and a group selfie, and I can’t wait to go back for another enjoyable meal soon… 

This n’oatmeal (not oatmeal) breakfast bowl recipe seems a fitting finale to my day full of fitness, fresh food and friends… not least because the basic variation is autoimmune-paleo compliant! When I want something that isn’t an egg for breakfast, I enjoy different versions of this n’oatmeal breakfast bowl because it’s quick, purty, easy, filling, sweetened only with fruit, can be served warm or cold, and is a blank canvas on which to play play PLAY with the toppings of your choice! If that doesn’t recommend it to ya, I don’t know what will. You have to be a fan of coconut, true, but if you are (and especially if your belly happens to be sensitive to grains, nuts, or eggs) then this little breakfast is a great card to play. 

N'oatmeal Breakfast Bowl (grain free, fruit sweetened, dairy free, #vegan, #paleo)

 

N’Oatmeal Breakfast Bowl

This quick substitute for oatmeal is fruit-sweetened, infinitely customizable, and can be served warm or cold.
Ingredients
  • 1 cup shredded coconut
  • 1 banana
  • 1 tsp cinnamon
  • ½ cup butternut squash purée
  • ½ cup coconut milk
  • Pinch salt
Instructions
  1. Puree the ingredients in a food processor until combined but the texture of the shredded coconut remains.
  2. Spoon into serving bowls and enjoy with toppings of choice (options include melted chocolate or cacao nibs, chopped fruit or berries, crushed nuts and seeds, bee pollen).

    This sounds like a great combination! Most people don’t think to use butternut squash in breakfast dishes and sweets, but I pretty much always use then instead of pumpkins because they’re smaller and easier to handle. I can’t really taste the difference either.
    Add coconut and banana, and I’m guessing it tastes great!

      Yes, I regularly cook with butternut squash… whereas I don’t use pumpkin unless it’s out of a can!

    This looks lovely! I’ve got a bad cold right now and hardly anything looks appetizing to me, but this looks great! Do you think I could sub canned pumpkin for the squash puree? I’ve got that on hand.

    I’ve been dying to try CrossFit but can’t find a place that offers classes in my area. 🙁 This breakfast bowl sounds like it would definitely give you the energy you need to power through one of those classes!!

    I’ve made a lot of n’oatmeal in the past, but this was the best bowl yet! I don’t know why this recipe isn’t glittering with praise, haha. 🙂 The texture was near spot-on. Thank you for the recipe!

    This looks amazing! Im wondering if its safe to heat it up a little. Like maybe 30 secs in micro. My mornings here are a bit cold and this n’oatmeal would be my go to in the am. Thanks for sharing.

      I think it would be just fine to heat! Only a short amount of time, however, you don’t want to cook it. 🙂

    This is so flippin’ good. I froze the remainder of the butternut squash, let it thaw in the fridge overnight, and then purée with everything else in the morning. Quick and easy! Sticks to your ribs, and again, is so good. Thanks so much for the recipe!

    Hi, I tried to cook this but it just tasted like dinner and looked like pumkin purée, bright orange, have I done something wrong. I miss oatmeal so much on aip.

    Do you buy the butternut squash and bake and then puree it in advance and then keep it in the fridge for this breakfast?

    Just to clarify – coconut milk – carton or can? They’re pretty different, and I’m presuming the canned (thicker, more coconutty) is what you’re using, but want to be sure. Thanks in advance – look forward to trying this!!
