No-bake cookie dough. In a jar.
If that doesn’t spell lazy decadence, I don’t know what does. This no-bake cookie dough is perfect for those moments when you are desperately craving something sweet and chocolate-y, but don’t have the time (or patience) to make a full-blown batch of cookies. Not only is it the easiest of solutions to satisfy your sweet tooth, but this combination of coconut, maple syrup and chocolate is incredibly addicting. Hence the small batch size is the savior of the situation. 😉
This no-bake cookie dough takes only minutes to make and there’s no waiting for them to bake… just slow your roll for a minute to let the coconut flour set, and then you can eat the mixture straight from the jar – no raw eggs to worry about! Also versatility is a plus: grain-free baking can be so finicky, but this recipe works as the base for all kinds of add-ins. If you’re not in the mood for chocolate chips, go for dried fruit instead. Drizzle with almond butter or sprinkle with cinnamon. Add a splash of vanilla extract if you like, the possibilities are endless!
Whichever way you spin it, this recipe is your ticket to get cookie’d up in a hurry.
P.S. This no-bake cookie dough is inspired by my friend Angela’s cookie in a jar recipe (head over there if you’re more in the market for an almond flour version of a no-bake cookie) which I’ve been a fan of for quite a while, by now.
- ⅓ cup shredded unsweetened coconut
- ¼ cup chocolate chips
- 2 tbsp coconut flour
- Pinch salt
- ½ tbsp maple syrup
- ½ tbsp coconut oil
- ¼ cup coconut milk
- Combine all ingredients in a jar and stir together. Wait a minute or so for the coconut flour to absorb the moisture of the wet ingredients, then stir again.
- Enjoy straight from the jar with a spoon or form cookie dough balls.

These remind me of Hail Mary Coconut Macaroons (at least I think that’s the name?)! Which are super delicious btw 🙂 Totally going to have to make these!
Grok Grub
TashReally? Never had the Hail Mary version! I would give them a try but I think I’ll just make another jar of this. 😉

This is by far the most popular recipe on my website. Even a 5 year old can make this. It’s the ultimate lazy, delicious, fun treat!! Your coconut version looks amazing.

Angela Privin at Paleo Kitchen LabI’m a total coconut fiend (shredded coconut is my go-to snack that really fills me up) so I decided to take a break from the nuts and post this in case others feel the same…

LOVE this. I’m obsessed with no-bake desserts right now. Just put one up on my site recently for no-bake almond joys too! Love that this is nut-free too. But I bet you’re right, a drizzle of almond butter would be ridiculously good on this…

Real Food with DanaI think everyone gets excited about no-bake during the summer, right?

Why can’t 1 serving size = 1 jar??! These look awesome. I love anything coconut!
Grok Grub
frostonthevineHeh, I actually made a mistake in the recipe, it serves two rather than four. Find a friend, share the jar!

I’d never thought coconut no bakes. I’m going on a week-long writing retreat to the Adirondaks in July and girls camp for a week in September. I think these will be a hit in both places.
