These 2-Ingredient Banana Coconut Cookies are the ultimate simple treat. They contain no gluten, grains, dairy, eggs, nuts or added sugar, and are so quick and easy to make (requiring only a bowl, a spoon, and a baking pan).

I saw some two ingredient cookies on Instagram, then on Tumblr. I didn’t see THESE two ingredient cookies, let’s be clear, I saw banana and oatmeal cookies.
That banana and oatmeal version, which inspired my banana coconut cookies, seems to be common on vegan food blogs but I thought, when I saw them, that coconut would work just as well. I was right!
So here they are. Cookies made with truly just two ingredients (of course, you may add other things if you prefer)!

These are the perfect thing when you a cookie, but don’t want the complication of mixing flour, butter, eggs, baking soda, and more. Plus, these 2 Ingredient Banana Coconut Cookies have the fact going for them that banana and coconut is an A+ flavor combination. Just throw the two ingredients together and let the magic of the oven do its work.

P.S. These are kid-tested, and kid-approved. My niece and nephew (aged 3 and 5, respectively) enjoy these every time they visit my parents, since my mother makes these for my father regularly! Although I suspect they think they’re eating a biscuit. The key is not to call them “cookies” in front of any child that eats Toll House, etc. on the regular, because they’ll be disappointed. But a sweet, healthy, keep-the-munchies-at-bay snack? This recipe delivers.

2-Ingredient Banana Coconut Cookies
- Prep Time: 5 min
- Cook Time: 25 min
- Total Time: 30 min
- Yield: 5 servings 1x
Ingredients
- 1 banana
- 3/4 cup unsweetened shredded coconut
Instructions
- Preheat the oven to 350° F. Grease a baking pan, set aside.
- Pulse the two ingredients for a few moments in a food processor until very well combined.
- Shape into discs, then set on the greased cookie sheet and bake in the preheated oven for 25 minutes or until golden.
Notes
Optional mix-ins include: chocolate chips, chopped bacon, chopped nuts, dried fruit, cinnamon. Be sure and do not incorporate more than a small handful of mix-ins into each batch, or the cookies will not hold together.

AmberTo figure calories add calories in 1 banana (about 105) + 3/4 cup coconut (listed on the bag) and divide by the number of cookies. If the serving size of coconut is in tbsp, there’s 12 tbsp in 3/4 cup. My estimate is about 650 in the recipe.

Wow, a lot of comments. I just made these using riper bananas. There was no problem with the bottoms burning, perhaps because I put them on a higher rack in the oven. They are good and a lot like macaroons but they have a subtle flavor that is a bit odd. It may be I am not used to cooked banana and using the firmer, fresher bananas will be better. However, one little cookie was not enough. Five more were just about right. This recipe is easy, easy. So easy that everyone should make them and experiment with some of the additions. I’m eager to try a tiny bit of ground almonds or a pinch of salt. Be careful. This seems like a flavor that is easily whacked the wrong way. Quite a tasty little treat if you need something quick and homemade. I have a friend who is waiting to try these.

MeganI think it would work! Cookies will be darker in color, and you’ll need to up the amount of coconut because I think the thawed bananas will be incredibly mushy. Add coconut until the dough is not soupy any more…

I seriously have to agree with you about those 2-3 ingredient things that are constructed from a box mix and the commercial pie filling as “2-3 ingredients”. Not. While I don’t eat desserts often (I’ve excised most of my “sweet tooth”), somehow, I always, always love trying out things made from real ingredients, dessert or otherwise. These were fine. Easy to make, tasted alright – like banana and coconut. Very healthy taste. But they had way too much fiber for me. Woke up in the middle of the night with cramps. How big was the banana that you used? Or how much roughly in grams should I be looking at using? I prefer to work in weight measurements to get a more consistent recipe.

Prior to paleo, I tried the oatmeal version and was unimpressed. After I went paleo, I tried these and thought they were pretty good. I occasionally added a few Enjoy Life mini chips on top. Now that I am autoimmune paleo, these stand in nicely for a cookie, and are surprisingly satisfying when I need something sweet, but I also don’t feel guilty eating a couple with breakfast. I usually add a little alcohol-free vanilla extract and cinnamon. Sometimes I add some carob powder for a chocolate flavor. Thanks for this recipe!

OMG. I am a diabetic and use to low sugar desserts. These were delicious and filling. Feel like I just had a whole bowl of macaroons and macaroon and just ate 1 cookie. I baked mine on no stick foil and greased only 4 spots for cookies. Baked 15 minutes on one side and turned over cookies to bake additional 10 minutes on other side. Ate one warm. Do I store the rest in frig or cookies canister??

BonnieDefinitely worth a try! Mash up the banana first, then gradually add in the coconut flour… being careful not to add too much (as coconut flour soaked up moisture with a slight delay).

I made these one time with a diced up square of the lindt 85% dark chocolate…so good. Also made these with cinnamon and raisins…sooooooo goooooood! I used super black bananas that I keep in the fridge and they turn out wonderfully.

Hi 🙂 I really am loving this recipe and want to try it to make it for family I’m visiting in India! This’ll be perfect for them since they follow many dietary restrictions (no eggs, added sugar, etc). However, I think I only have fresh coconut available to me here and am concerned that if I add freshly grated coconut there’ll be too much moisture in the batter… Maybe if I add some ground almonds or oats? What do you think? I’m also considering adding some chai tea spice mix to spice it up for my family’s palate. Do you think that the flavor would meld well with the baked banana and coconut? Thanks so much!!!

I made the recipe as is and they were great with coffee but I wanted a little more flavor for a stand alone cookie. I took some raspberry chia “jam” that I made (fresh raspberries, lemon juice, chia seeds and a couple tbsp of maple syrup), rolled the coconut banana batter into a ball and made thumb print cookies with the jam! They were EXCELLENT!!!! Just wanted to pass it on! 😉

I made these with just banana & coconut, & while I liked the texture, I was hoping for a bit more flavor (they were wonderful topped with a dollop of strawberry jam). So the next batch, I added a tablespoon of almond butter, a scoop of vanilla protein powder, & a tsp of stevia. They turned out quite well, even with all of my tweaking. I know I took away from the whole 2 ingredient thing, but I do enjoy tinkering with recipes. I saw someone else’s suggestion of cocoa powder & I think I may try that next. I think this is a great recipe & lends itself well to different add-ins. Thanks!

I made these today with riper (but not over ripe) banana and Great Value organic shredded coconut. I found that the texture came out a lot more chunky than shown in the pictures above and that the cookies were not baked even after 35 minutes, when the edges and bottom started to burn but the middle was still soggy. I think I would try a less ripe banana and a very finely shredded coconut such as Bob’s Red Mill next time. Hoping for better results the second time around.

Really tasty! I only had flaked, unsweetened coconut but it worked out well with a couple extra minutes in the processor. I was worried about the consistency before baking but they turned out very well! I added dried cranberries and look forward to trying different mix-ins next time! Yum!!

I tried this recipe, but I had a very large banana. Next time I’ll know to make a thicker “dough”. I did like the flavor. I added hemp, chia, and flax seed to my recipe. I’ve never felt the need to reply to a recipe until now. Having many stomach issues and following a strict diet I have a very hard time finding yummy and simple recipes for desserts. I stumbled across this one and was pretty skeptical that only two ingredients could form a cookie, let alone taste decent. Boy was I wrong. These are my new FAVORITE dessert. I added a touch of cinnamon and I’m absolutely obsessed. I had to stop myself from eating the entire batch after I took them out of the oven. I made mine pretty thin (9 cookies) which allowed them to brown and get a little crispy around the edges…..YUM

Thank you for this recipe. I’m new on AIP and was missing something cookie-like to treat myself with. I used to make banana-oats cookies just like this (banana + oats) but being off oats now I was searching for something similar, easy and quick. This is perfect! It’s like a banana flavored macaroon. I made half the batch just as you described then I made the other half with a sprinkle of cinnamon and some raisins. Oh boy, they’re both great. I feel like I cheated but I know I won’t have to worry about the achy joints and sausage fingers that would come if I had.

I tried this with applesauce instead…a half cup and the coconut and I baked for maybe 3 to 5 minutes longer. They turned out just fine. It’s a nice alternative to banana! I might try adding some honey to my next batch. A great go to snack for my daughter as she starts daycare soon (no nuts!)
